    Location doesn't get any better than this: Iconic Sydney Harbor sits at the doorstep of our award-winning Central Business District Hotel, with historic The Rocks and Circular Quay right next door. Head out to explore the nearby shopping, outdoor adventure and vibrant social scene that surround us, then meet back at Mode Kitchen & Bar for fresh, local cuisine and drinks at Grain. In Sydney, work and play are never too far apart. And that's just the way we like it.

    What you will Do

    As a Sous Chef within our Kitchen, you will work closely with our Executive Chef, and take charge of our breakfast service across the Hotel in three outlets - Mode Kitchen & Bar, In-Room Dining and Lounge 32. They say that Breakfast is the most important meal of the day, and it is certainly the busiest meal serving period in our high volume 531 room Hotel. You will ensure that each dish served is presented immaculately and is of the highest quality, whilst assisting to control food cost, portion control and wastage.

    What you bring

    • You'll be a master of your craft with previous experience at the same level, strong product knowledge and technical skills
    • A passion for creating superb food in order to provide a memorable guest dining experience
    • Strong leadership skills and the ability to coach and develop your talented brigade of chefs
    • A keen interest and understanding of current kitchen trends and cuisines
    • Excellent communication & organisational skills
    • Comprehensive knowledge of food safety standards
    • Working knowledge of stock management, quality control and ordering
    • The ability to work a rotating roster including weekends
