- 2-3 years' experience in a similar hatted or high-end restaurant
- Knowledge of good cooking techniques and an understanding of Mediterranean cuisine is a bonus
- Someone that can hold their own in a busy service while staying professional and guiding chefs
- Good communication, organisation and technical skills
- Confident to lead the kitchen, adapt to situations and work across any section when required
- Be creative and have a passion for good food
- Experience in COGS, P&L's and kitchen admin
