Mercure Perth_** is conveniently located in the heart of Perth city, with the major shopping, entertainment and nightlife areas all close by.

The hotel features 239 well appointed rooms, along with a great restaurant, a cafe, bar, heated rooftop swimming pool, spa, sauna and gym.

Business guests are well catered for at Mercure Perth with 6 modern meeting rooms available, accommodating up to 350 delegates.


Working across our multi-outlet venue, you will be responsible for the day to day front of house operations of our restaurant, bar and events spaces.

This is a hands-on role focused on delivering memorable guest experiences.


In this role you will:

  • Manage the restaurant, bar, room service and conferencing floors
  • Develop, implement and maintain quality standards
  • Work closely with the Head Chef to innovate menus and products for sale within the F&B areas of service
  • Leading, mentoring and training the Food & Beverage Operations team
  • Review and analyse daily operational needs maintaining beverage, labour, product and expenses on budget
  • Staff roster management, stock control and purchasing

Qualifications

  • Approved Manager's or RSA
  • Strong understanding of food safety requirements (Food Safety Supervisor)
  • Previous experience in a multivenue, hotel environment
  • Previous study in Hospitality highly regarded
  • Ability to act independently, but also work in a team environment
  • Confident in creating rosters and adhering to wage control
  • Selfmotivated with a passion for hospitality and the guest experience


Please note, the successful applicant will be required to work across a 7 day roster including weekends, evenings, and public holidays.

Additionally, this role requires someone who can lead by example, and who is hands on, on the floor with the team.
