W Sydney, opening in Darling Harbour in October 2023, is now casting for a Beverage Manager to lead the beverage program for the hotel.

Collaborating closely with the senior Beverage & Food leader, this integral role will work closely with venue leadership team to create unique and vibrant beverage experiences in our different venues in the world's largest W Hotel.


The Beverage Manager's primary responsibility is creating a strong beverage program for the hotel that includes writing beverage menus for different venues, creating an award-winning wine list for the restaurant, collaborating with the beverage partners to manage the beverage offerings, working closely with the cocktail partners in curating vibrant experiences, executing the programming calendar, and working closely with the B&F team to execute the hotel's beverage strategy.

JOB SUMMARY


Plays a significant role in maximizing financial performance and attracting hotel and non-hotel guests by understanding the local market and partnering with the B&F leadership to effectively position the venues.

Supervises daily beverage operations and assists with beverage offerings and upsells, menu planning and assists the talent on the floor during peak meal periods.

Strives to continually improve guest and talent satisfaction. Determines training needed to accomplish goals, then implements plan.

CANDIDATE PROFILE

Education and Experience

  • High school diploma or GED; 4 years' experience in the beverage and food, culinary, or related professional area. WSET or Court of Master Sommeliers certifications is an advantage.
OR

  • 2year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 years' experience in the beverage and food, culinary, or related professional area. WSET or Court of Master Sommeliers certifications is an advantage.

CORE WORK ACTIVITIES

Managing Beverage Program

  • Work closely with the B&F leadership team to curate beverage program and the beverage lists for the different venues based on the concepts and keep up to date as per market trends.
  • Implements new concepts and promotions for the restaurant and bar/Lounge.
  • Manages in compliance with all local, state, and Federal beverage and liquor laws.
  • Understands beverage control including days on hand, perpetual inventory, bar pars, portion control, costs controls, beverage potentials, mix of sales analysis for beverage, issue & returns, food standards, and period end inventory.
  • Implements agreed upon beverage policy and procedures throughout the property.
  • Monitors adherence to all liquor control policies and procedures.
  • Participates in the management of department's controllable expenses to achieve or exceed budgeted goals.
  • Ensures compliance with all beverage policies, standards, and procedures.
  • Manages inventories according to budget and business levels.
  • Assists with developing bespoke menus and beverage programming as necessary.
  • Training and development of the B&F talent throughout the hotel and oversee consistency and quality of beverage delivery.

Taking an Entrepreneurial Approach to Driving the Business

  • Understands financial opportunities by surveying venue demands.
  • Collaborate with key partners in the local market to assess opportunities.
  • Identifies and analyses competitors.
  • Controls purchases and inventory by negotiating prices and contracts, developing preferred supplier lists, reviewing, and evaluating usage reports, and taking corrective action.
  • Applies sound revenue management strategies to secure the right level of business at the most optimal time to yield maximum revenues.
