We are thrilled to offer you an amazing opportunity to become part of our team as a marhaba Manager, overseeing the dnata's marhaba lounge service.


In this key role, you will be in charge of developing and implementing the growth strategy for the marhaba Lounge nationally, while also being the accountable leader for the department.


Based in Melbourne, you will work closely with a team to deliver exceptional customer service with sincerity and care to our clients.


Your main responsibilities will include preparing and presenting the lounge menu, cooking daily, and most importantly, ensuring a top-notch experience for our premium passengers frequenting the lounge.


Moreover, you will provide guidance and feedback to enhance service standards that define our premium brand, ensuring the exclusivity of our service promise to premium guests, while also meeting the needs of all lounge visitors within operational boundaries.


Primary Responsibilities:

  • Maintaining the highest food quality and presentation standards in food production and menu-based catering.
  • Developing long-term strategies for the culinary and food service departments in line with dnata's objectives.
  • Staying updated on culinary trends and innovations to constantly improve food offerings and stay competitive.
  • Leading the growth strategy for the marhaba Lounge service nationally.
  • Collaborating with chefs to create menus catering to different preferences, dietary restrictions, and seasonal variations.
  • Supervising the creation of unique and attractive dishes reflecting marhaba's culinary identity.
  • Leading the team with a focus on excellent performance.
  • Ensuring smooth lounge maintenance for continuous operations.
  • Motivating team members by fostering trust, open communication, innovative thinking, and teamwork.
  • Coordinating with other departments for food-related initiatives, promotions, and events.
  • Exemplifying dnata's values and ensuring adherence to policies and procedures.
  • Building strong relationships with Airport Management and operational team members.
  • Handling additional duties as requested by Senior Management.

Essential Requirements:

  • Qualified Head Chef with an emphasis on detail, quality, and presentation standards.
  • Experience in 5-star Food & Beverage industry.
  • Minimum of 10 years of managerial experience in a high-end dining environment.
  • Diploma/Degree in Food & Beverage, Travel, Tourism, or Hospitality Management.
  • Proficiency in HACCP, food safety, allergen management, and infection control.
  • Business development expertise.
  • Strong interpersonal and leadership skills.
  • Effective problem-solving, resilience, and adaptability.
  • Excellent written and verbal communication skills.
  • Desire to assist internal and external stakeholders.
  • Knowledge of Guest Service Standards and Customer Service experience.
  • Entrepreneurial mindset.
  • Must pass an ASIC security clearance and have a current Police Clearance.

Desirable Requirements:

  • Experience in managing high-value guests in various situations.
  • Vendor Management or Sales experience.
  • Understanding of change management.
