Together, we'll deliver exceptional experiences for our guests at some of Sydney's most loved venues, Bistecca, The Gidley, The Rover, and our newest addition, Alfie's.

Essential Requirements of Employment Include:


  • You must have created World-Class cocktail lists
  • Managed a successful cocktail bar for a minimum of three year
  • The drive to develop and deliver structured group training sessions
  • Full Australian work rights
  • Motivated to compete in National Cocktail Competitions
  • Experience in venue inception, particularly in designing bar layouts

About the Role:


  • Working closely with the Liquid & Larder Quality Team
  • Oversee & approve all menu creations in line with strategy & brand
  • Mentor, corrects & train bar teams
  • Implements the goals and objectives of the company.
  • Provides direction and leadership to the bar teams in order to uphold the venue's philosophy, mission and its annual goals and objectives.
  • Carries out inspections, completes bar audits and reports
  • Has a clear understanding of current global trends and ideas
  • Suggests, amends and trains policy corrections
  • Continue to drive and grow the business through the menus being put forward
  • Hiring input for key roles.
  • Demonstrates an exceptional and learnt palate and up to date of best practice techniques.
  • On shift weekly as required to ensure quality standards maintained as determined by Head of Quality
