    SPON is about the celebration of all things spontaneous. Our new wine bar & bottle shop is made for trying new things and having fun exploring the possibilities.

    With our store developing and growing, we need a seasoned and ambitious Manager to coordinate and oversee the operation of the in-store, retail, and e-commerce operations.

    SPON has a marked focus on natural wine, craft beer, and spirits made by producers with conscious farming efforts; working sustainability, organically, and biodynamically. We focus on honest expressions of terroir, including native yeasts, bacteria, and cultures. This natural booze-forward concept is the cornerstone of our initial Odd Culture vision, and our bottle shop hosts one of the most extensive packaged liquor offerings in Sydney.

    In the shop, we've gota rotational 12-bottle wine, beer, and cider board, all available by the glass. If there are open slots on the board, we encourage guests to browse the shelves and fridges for a drop they want and bring it to the counter for us to open and pour by the glass for anyone to partake, until the bottle is empty. The bottle shop boasts an extraordinary selection of wild ales, natural wines, and other beverages.

    Our rotational bottle selection format creates a highly dynamic and ever-changing service and guest experience, with something new on pour every day, multiple times a day.

    About the role

    As our Manager, you will play a pivotal role in enhancing our guests' drinking experiences by providing expert guidance on wine selection, ensuring impeccable service, and contributing to the overall success of our humble little venue. You will work closely with the team to create distinct experiences for our guests.

    Key Responsibilities

    Wine service

    Provide attentive and professional wine service to guests, including presenting, pouring, and describing wines accurately and eloquently.

    Guest interaction

    Engage with guests to understand their preferences and make tailored wine recommendations based on their tastes and menu selections.

    Maintaining the wine cellar and inventory, ensuring proper storage, organisation, and rotation of wines.

    Team training

    Participate in ongoing wine education and training sessions to refine your wine knowledge and service skills.

    What you should possess

    A proven history of managing all areas of a bottleshop for at least 2 years

    A full understanding of stocktaking systems and reporting

    A genuine passion for wine and a desire to pursue a career in the wine industry.

    Basic knowledge of wine varietals, regions, and production methods.

    Excellent communication and interpersonal skills.

    Exceptional customer service and presentation skills.

    Ability to work in a fast-paced, team-oriented environment.

    Well-versed in venue compliance, including RSA management and licensing

    Administrative

    Achieve and exceed the 8-band KPI requirements on a weekly and monthly basis

    Present P&L outcomes in your venues to senior management on a monthly basis

    Engage with and customise the company's work/project management system as needed for your venues

    Ensure that all processes defined in the venue's weekly SOPs and critical paths are completed to a high standard

    Provide the required stock reporting based on data provided by weekly stock-takes

    Manage wage and other variable costs to an expert level, adjusting daily to changes in the trade environment and other external factors

    Engage in the maintenance and upkeep of your venue within prescribed timeframes and budgets

    Complete end-of-week reports within the prescribed template to the requested level of detail

    Complete cash management procedures every week

    Complete purchasing of stock, consumables, and other venue materials as prescribed in the weekly critical path

    Complete weekly team rosters taking into account budget, variable internal and external factors, fairness and balance for the team

    Complete purchasing registers accurately and account for stock delivery, pricing, credit notes, and other challenges that may arise.

    Ensure that all invoicing is submitted correctly by the appropriate date in the critical path

    Engage with senior management via the company's work management system and weekly Business Review Meetings
