This is an operational leadership role — not a desk job This is a visible, floor-led leadership role — you will be present in all service areas, not managing from afar.

Tattersalls Boutique Hotel Armidale, a heritage-listed luxury hotel in the heart of the New England High Country, is seeking a F&B Ops Manager to oversee the daily operations of our food and beverage service. From our elegant dining room to our bustling cocktail bar and lounge, you'll play a pivotal role in delivering the high standards that define the Tattersalls experience.



About the Role


As F&B Ops Manager, you will be responsible for leading our front-of-house team across the restaurant, bar, and event spaces. You'll manage daily service operations, maintain quality standards, and ensure guests receive impeccable and seamless hospitality.

Key Responsibilities:

  • Oversee daily operations of all food and beverage outlets, including restaurant, bar, and in-room dining
  • Lead, train, and roster a team of front-of-house staff, including waitstaff and bartenders
  • Drive service excellence and ensure a consistently high level of guest satisfaction
  • Monitor floor operations during service, responding to guest needs and resolving issues swiftly
  • Collaborate with the Head Chef and General Manager to coordinate menu updates, service standards, and event requirements with our event coordinator
  • Manage bookings, table allocations, and function coordination
  • Ensure compliance with RSA, hygiene, and OH&S regulations
  • Maintain cleanliness, presentation, and ambience across all guest-facing areas


What We're Looking For

  • Minimum 2-4 years' experience in a similar leadership role within a high-end restaurant, hotel, or luxury venue
  • Proven leadership skills, ability to train, mentor, manage and motivate a service team in a fast-paced, customer-focused environment
  • Excellent communication and interpersonal skills
  • Strong knowledge of food, wine, and beverage service standards
  • Analyse financial reports, forecasts, and KPIs to drive profitability

Manage staffing levels, rostering, labour and beverage costs to meet budget targets

  • Hands-on management style with a "lead by example" attitude
  • Immaculate personal presentation and professional communication skills
  • Experience with POS and reservation systems
  • Current RSA certification
  • Food Handler/Supervisor certificate
  • Availability to work flexible hours, including nights, weekends, and public holidays
