Skills Experience Demonstrated experience as a Sous Chef or Chef de Partie in a premium Japanese restaurant Demonstrated experience as a Sushi Chef, specialising in Kaiseki and Edomae nigirizushi Strong understanding and knowledge of Japanese cuisine Experience in high volume, fast-paced restaurant environment Understanding of HACCP food safety standards Strong work ethic and a can do attitude Ability to work autonomously as well as within a team Excellent communication, delegation and time management skills Exceptional presentation Able and willing to work shift work, including weekends and public holidays Working with LUCAS Restaurants People are at the core of our success.
